Thursday was a rainy day in Portland. It reminded me of comfort food and Mama.

In a family with nine kids, I grew up without having a lot of fancy food or expensive things but somehow Mom always managed to make meals fun. She used cheap staples to feed a humongous family and somehow we always thought we were getting a feast. One of the things I remember most is homemade French fries.

They are so easy to make and so cheap anyone can afford them.

For pennies you can enjoy some of the best tasting food in the world. All you need to do is slice up some potatoes - don't even peel them - they're better with the peels on. Heat some cheap oil - not olive oil, it's too expensive for this - on low to medium heat. CAREFULLY place your potato slices into the hot oil and cook for a couple of minutes until the fries are golden brown. Then lift them out and place them on a flat platter - making sure you have paper towels laid down to absorb the excess oil. Drizzle with salt and WAH-LAH you've got a yummified side dish



Heck, you might even end up eating so many you'll consider this the entire meal - I know I did but somehow I forced down a cheeseburger too. YIKES - time to go for a run.

Wow, that looks so good! My mom used to do this, too. She was very thrifty with what little money we had, and with making it stretch when it came to our meals. Thanks for that trip down memory lane. :)

YUM! I love fried food. I just wish it was better for you! But I eat it anyway!
Question: when we've fried oil in our kitchen, the kitchen smells oily. Do you know of a way to eliminate that???

I do love homemade fried food, but cannot bear the resulting mess and smell. Can I come over to your kitchen?

Kelly and GG: I live in an old Victorian house that was built in 1890 - the ceilings are about 12 feet high. I think the smell must have floated up there 'cuz none of us noticed anything and I RARELY fry anything - honestly.
