Tabletop Thursday - and a Treat to Top it Off






I love Mary Engelbreit (ME) and it's amazing what one little charger can do to make a plate pop on the table. I try to fancify my desserts with a little sprig of mint from the yard and a couple of pretty cherries - ME taught me that.

This is my Hawaiian Cloudburst dessert. It's a Pineapple Mousse and it is yummy for the tummy on a hot day. And it never hurts to use fruit to display a tasty treat.

Hi Kim,

I love pineapple and fluffy deserts especially after a heavy meal! I love the tablecloth, I'm a big fan of red. I've never heard of ME but she seems very creative. Thanks for sharing!

All it is is one pint of whipping cream, blended with two cups of sugar until it forms peaks, then I blended in one 8 ounce package of cream cheese, and two cans of pineapple, plus the fresh pineapple cored out. At the end I added some maraschino cherries and topped it with mint and a couple more cherries - it really is yummy.
